According to <a href="http://www.porkbeinspired.com/cuts/pork-chops/" target="_blank">Pork Be Inspired</a>, "pork chops are the most popular cut from the pork loin, which is the strip of meat that runs from the pig’s hip to shoulder." However, since the chops come from this strip of meat, pork chops can have several different characteristics determined by where they came from in the loin which determines their actual name. <br />

For years, when you went to grocery store to buy pork chops or ordered pork chops in a restaurant, they were simply labeled or listed as pork chops or used names like Top Loin Chop, Rip Chop, or Loin Chop. Meanwhile, most of us are familiar with names like Porterhouse, New York Strip, and T-Bone that have been used to describe the different steak cuts over the years.<br />
<br />
So a few years ago, pork decided to follow suit and provided <a href="http://www.porkbeinspired.com/wp-content/uploads/2014/06/193172-1.pdf" target="_blank">specific names for the 5 different cuts of pork chops</a> that mirror the beef steak names so as consumers we know exactly what we are buying or ordering. <br />

<b>New York Pork Chops</b> are boneless pork chops and are located toward the head of pig or the top of the loin. These chops are still sometimes called Center Cut Chops and in my opinion are often the most perfect and uniform looking cut of pork. "The 1¼ inch-thick top loin chop is also called an <strong>“America’s Cut.”</strong><br />

<b>Porterhouse Pork Chops</b> are from the lower back portion of the loin (just behind the rib chop) and have a characteristic T-bone shape. These chops include a lot of meat as well as a bit of tenderloin meat with the tenderloin being the most center part of the loin.</div>

<strong><br /></strong></div>

<strong>Ribeye Pork Chops</strong> originate in the center of the loin in the rib area and include some back and rib bone. You can also occasionally find a boneless option of this pork chop as shown in the picture.</div>

<strong>Sirloin Pork Chops</strong> come from the area of the loin around the hip and often include part of the hip bone. </div>

<strong>Blade Chops </strong>(not pictured above) are cut from the beginning of the loin in the shoulder area. They may contain some blade bone as well as back-rib bone. Blade chops are usually thicker and more marbled. </div>

Now I realize for someone that hasn't spent a lot of time analyzing the difference in meat cuts, this might be a lot to process. </div>

But the main takeaway is that as home cooks, we understand that there are different types of pork chops as certain recipes often specify the type of cut to use, even though you can usually use whichever cut you want. So you can choose the New York Pork Chop for that boneless convenience or you might what the attached bone of the Ribeye Pork Chop to add a visual to your meal. Either way, the cut doesn't determine the cooking length. It is the thickness of the pork chop that determines the cooking length. </div>

So my biggest advice is to always have a meat thermometer on hand when cooking pork chops as cooking them to the correct temperature is essential for having tasty pork and "for tender and delicious pork chops prepare your cut of meat to the <a href="http://www.porkbeinspired.com/pork-cooking-temperature/" target="_blank">internal pork cooking temperature of 145 degrees</a>" followed by a 3 minute rest period before cutting and serving. </div>

I love doing them as a group because usually that means you pick one recipe and make it multiple times to share one batch with each person in attendance. Last week, I was lucky enough to participate in the <a href="https://www.facebook.com/FamilyofFarmers/videos/1325539754155728/" target="_blank">Indiana's Family of Farmers Freezing Cooking Party</a> with 7 of my friends. So I made 8 batches of Garlic Pork Stir-Fry in the course of a couple of hours and came home with 8 meals for my freezer including one batch of my own Garlic Pork Stir-Fry. I'm so excited to have all of these meals waiting for us to eat in our freezer. With a little bit of thawing and a little prep work, dinner will be on the table in no time which is exactly what we need at this pigpen.<br />

In theory winter is supposed to give us a little bit of a break around the farm, but it seems like there is always something to be done from the daily chores of feeding and taking care of the pigs, to working on equipment or making repairs , to catching up on computer and paperwork. Now, we love the farm and ultimately wouldn't have it any other way, but with the farm and the busy lives our kids lead with two currently playing basketball amongst other activities, having a yummy meal on the dinner table that everyone will like with limited prep work is the way to my heart and ultimately our stomachs.<br />

Ingredients for 2 batches</h3>
<ul>

<span class="amount">3 to 4 pounds</span>
<span class="name">pork loin</span>
</li>
<li class="ingredient">
<span class="amount">3/4 cup </span>
<span class="name">soy sauce</span>
</li>
<li class="ingredient">
<span class="amount">1/4 cup</span>
<span class="name">white wine vinegar</span>
</li>
<li class="ingredient">
<span class="amount">1 tablespoon</span>
<span class="name">sugar</span>
</li>
<li class="ingredient">
<span class="amount">4 teaspoons</span>
<span class="name">minced garlic</span>
</li>
<li class="ingredient">
<span class="amount">1/2 teaspoon</span>
<span class="name">crushed red pepper flakes</span>
</li>
<li class="ingredient">
<span class="amount">2 </span>
<span class="name">onions, cut into 2 inch pieces</span>
</li>
<li class="ingredient">
<span class="amount">1</span>
<span class="name">green bell pepper, cut into 2 inch pieces</span>

<span class="name">red, yellow, or orange bell pepper, cut into 2 inch pieces</span>

Cooking Directions</h3>
<ol class="instructions">
<li class="instruction">
Rinse and time loin as desired.
</li>
<li class="instruction">
Cut pork into 1-inch cubes and divide evenly between two 1-quart freezer bags and seal.
</li>
<li class="instruction">
In a medium bowl, whisk together soy sauce, vinegar, and sugar.
</li>
<li class="instruction">
Divide the sauce evenly between two 1-quart freezer bags.
</li>
<li class="instruction">
Measure 2 teaspoons of garlic and 1/4 teaspoon crushed red pepper into each of the two bags and seal the bags.
</li>
<li class="instruction">
Once the onions and bell peppers are chopped, divide them evenly into two 1-quart freezer bags and seal the bags.
</li>
<li class="instruction">
Place on bag of pork, one bag of sauce, and one bag of peppers and onions into a gallon-size freezer bag and seal. Repeat with the remaining 3 bags.
</li>
<li class="instruction">
To prepare the meal fresh or after freezing, completely thaw one entree (one gallon-size freezer bag) in the fridge.
</li>
<li class="instruction">
Pour off and discard any liquid from the bag of pork.
</li>
<li class="instruction">
Add 1/2 cup cornstarch to the bag, seal, and shake to coat the pork.
</li>
<li class="instruction">
In a large skillet, heat 2 teaspoons vegetable oil over medium-high heat.
</li>
<li class="instruction">
Add pork and stir-fry until cooked, about 10-12 minutes.
</li>
<li class="instruction">
Add vegetables and sauce.
</li>
<li class="instruction">
Stir-fry until vegetables are tender and crisp about 5 minutes.
</li>

Serve with rice, if desired.</li>

have embraced technology in our personal lives, as farmers, we have embraced
technology that ultimately allows us to do more with less. By utilizing GPS technology, we are able to
precisely apply the exact amount of crop protection and fertilizers that may be
needed by a specific crop in specific location.
This has dramatically reduced the amount of crop protectants and
fertilizers needed to raise our crops and just one of the many ways that
technology is making a positive impacts on our farms and ultimately at the
grocery store for consumers. It is also
one of the many reasons that The Farmer and I's grandpas <a href="http://www.usda.gov/documents/Briefing_on_the_Status_of_Rural_America_Low_Res_Cover_update_map.pdf">fed 61 Americans annually in 1960 and

has also allowed us to provide the best care possible to our pigs. I've talked about this numerous times in the past, but just in case you don't think about my pigs as much as I do I thought I'd give you a little refresher. </span></div>

barns that allow us to not only protect our pigs from the elements such as
snow, sleet, rain, and hail, but also keep the barns at around <a href="http://www.3kidsandlotsofpigs.com/2010/06/farmer-fridays-70-degrees-year-round.html" target="_blank">70 degrees year round </a>and protect the pigs from predators, such as coyotes. I can only wish that my grandfather was still
alive to see how we raise our pigs today.

A few weeks ago, Ann-Marie and I visited 3 grocery stores with the help of a wonderful dietitian, Kim.<br />

Our mission was to buy the ingredients for one recipe at 3 different stores to compare the selection, prices, and such.<br />
<br />
It was so much fun and tiring. <br />

We visited Kroger, Trader Joe's, and Meijer.<br />
<br />
The selection and prices at Kroger and Meijer were very similar. In fact if I wanted, I was able to purchase the same brands of all of the ingredients at Kroger and Meijer,. Trader Joe's was a little different, but I was able to find all of the necessary ingredients with a little bit of improvisation. (They didn't have any bulk Italian sausage, but they had Italian sausage links.)<br />
<br />
Now different sales were taking place at all 3 locations, but on the day that I purchased my groceries I spent $13.52 at Meijer, $15.82 at Kroger (my receipt shows $18.82 as I bought an extra package of pepperoni), and $18.83 at Trader Joe's. <br />

I must admit I had never been to a Trader Joe's prior to this visit. The closest Trader Joe's is over a half hour away and a full-time off-farm working mom of 3 busy kids, I tend to shop at the local Walmart where I can get almost everything we need from deodorant to milk without breaking the bank. It was interesting to visit Trader Joe's and I could see if you were looking for something specific, it might just be the place to go. <br />
<br />
Now the best part of all of this was getting to visit the stores with Ann-Marie and Kim. I think I can speak for Ann-Marie when I say we learned so much from Kim.<br />
<br />
One of the things we discussed were quick and easy way to increase the nutritional value of a recipe. Specifically in regards to this super easy pizza casserole we talked about adding diced tomatoes, mushrooms, spinach, and many other veggies much like you would a pizza. Based on this conversation, I did decide to add diced tomatoes to my recipe. <br />
<br />
We also talked a lot about how confusing all the labels are at the grocery store since some of them are marketing labels and some are nutritional. It can be so confusing so it was nice to have Kim with us. <br />
It truly was a great day and then it was time to head home to use all those ingredients we bought. <br />
<br />
So let's talk about the super easy pizza casserole that is The Farmer's favorite. This truly is such an easy recipe that won't disappoint. <br />

<span class="amount">12 oz. </span>
<span class="name">wide lasagna noodles (prepared per directions)</span>
</li>
<li class="ingredient">
<span class="amount">2 14oz. jars</span>
<span class="name">pizza sauce</span>
</li>
<li class="ingredient">
<span class="amount">2 cups</span>
<span class="name">shredded mozzarella cheese</span>
</li>
<li class="ingredient">
<span class="amount">6 oz.</span>
<span class="name">sliced pepperoni</span>
</li>
<li class="ingredient">
<span class="amount">14.5 oz can</span>
<span class="name">diced tomatoes</span>
</li>

Cooking Directions</h3>
<ol class="instructions">
<li class="instruction">Brown Italian sausage; drain.
</li>
<li class="instruction">Drain tomatoes and combine with pizza sauce in a batter bowl.
</li>
<li class="instruction">In lightly greased 9x13 pan, layer one half noodles, one half sausage, one half pepperoni, one half sauce mixture, and one half cheese.

<li class="instruction">Repeat with second layer of noodles, sausage, and remaining ingredients, reserving several pepperoni slices to garnish top.

<li class="instruction">Bake at 350 degrees for 35-40 minutes.

Recently I was lucky enough to have <a href="http://chaosisbliss.com/about/" target="_blank">Ann-Marie</a> from <a href="http://chaosisbliss.com/" target="_blank">Chaos is Bliss</a> visit our family farm for a one-on-one tour thanks to <a href="http://www.indianafamilyoffarmers.com/" target="_blank">Indiana's Family of Farmers</a>. Ann-Marie and I talked about all kinds of things from the similarities in our families, how we raise our pigs, and my favorite pork recipes. Although my all time favorite pork recipe is a good ole pork burger, I must admit I'm quite fond of this one pot spaghetti with pork Italian sausage and it is definitely becoming a go-to recipe at this pigpen.<br />

We feel very blessed to be able to raise food for our family and all of yours. So that being said, I'm often asked where can you buy the food we raise and grow on our family farm.<br />

The answer is really quite easy, but it may not be obvious.<br />
<br />
You see <a href="http://www.3kidsandlotsofpigs.com/2011/03/farmer-fridays-where-can-you-buy-our.html" target="_blank">you can buy the food we grow and raise</a> at the grocery store or mega big box store. We don't have our own label or anything at the grocery store, but when you buy pork at the grocery store that is helping our family farm and fellow farms just like ours.<br />

Our family sells the majority of our pigs to <a href="http://www.tysonfoods.com/" target="_blank">Tyson Foods</a> who then distributes the pork in the grocery stores across the country. So there is a good chance when we sell our pigs to Tyson Foods in Indiana, our pork ends up in a grocery store near you especially if you are in Indiana and the Midwest. <span style="background-color: white; color: #333333; font-family: Verdana, Arial, sans-serif; font-size: 13px; line-height: 16.8999996185303px;"> </span><br />

So what about our corn, soybeans, and wheat?<br />

Well all of the <a href="http://www.3kidsandlotsofpigs.com/2010/06/farmer-fridays-stages-of-corn-growth.html" target="_blank">corn we grow on our family farm</a> is used to feed our pigs so we don't sell any corn.<br />

We do sell all of our soybeans; however, we sell them to a local soybean processor that makes soybean meal from our soybeans and we buy soybean meal from them to mix with the corn to <a href="http://www.3kidsandlotsofpigs.com/2011/10/farmer-fridays-what-do-we-feed-our-pigs.html" target="_blank">feed our pigs</a>. (Soybean meal is what is left after the oil and hulls are removed from the soybean and is a protein source for out pigs. The oil that is removed is used for cooking oil and the hulls are used as a fiber source to feed other animals.)<br />

As far as our <a href="http://www.3kidsandlotsofpigs.com/2010/07/farmer-fridays-wheat-harvest.html" target="_blank">wheat</a> goes, we only grow a small amount of wheat each year. But what we do raise, we sell to a local elevator where it is milled and turned into flour. <br />

As a farm family, the words super and easy in a recipe always catch my attention especially if the crock pot can be used. As I was flipping through my new <a href="http://www.gooseberrypatch.com/" target="_blank">Gooseberry Patch</a> <a href="http://www.amazon.com/gp/product/1620931540/ref=as_li_qf_sp_asin_il_tl?ie=UTF8&camp=1789&creative=9325&creativeASIN=1620931540&linkCode=as2&tag=3kidsandlotso-20&linkId=PBAVHMD3OHJRNJKA" target="_blank">Mom Knows Best Cookbook</a>, this Chicken Tortilla Soup recipe definitely caught my attention. And it was just what our family needed for lunch yesterday. <br />

As you know we are in the midst of <a href="http://www.3kidsandlotsofpigs.com/2010/06/farmer-fridays-our-memorial-day-weekend.html" target="_blank">planting season</a> which is often crazy and chaotic. <a href="http://www.3kidsandlotsofpigs.com/2010/07/faith-hope-and-love-are-required-at.html" target="_blank">The Farmer</a> has essentially been in the fields non-stop the last few weeks. But thanks to some much needed rain on Saturday, The Farmer got to spend yesterday at home with us. Now when you've been working like crazy the last thing you want to do is come home from church and wait to each lunch. That is why this recipe was absolutely perfect.<br />
<br />
With very little prep time, I was able to mix together this soup and throw it in the crock pot before we left for church and it was ready to eat when we got home a little after noon. And based on the fact that everyone went back for seconds and there were no leftovers, I would say this Chicken Tortilla soup was a big hit at this pigpen. <br />

Cooking Directions</h3>

In a stock pot over medium heat, saute onion in oil until tender and golden. Add remaining ingredients except garnish; stir. Bring to a boil. Add to slow cooker and cover and cook on high for 2 hours. At serving time, ladle into soup bowls; add desired toppings.</li>

This recipe can also be prepared in a dutch oven by following the above directions except after bringing everything to a boil, reduce heat to medium-low. Cover and simmer for one hour, stirring occasionally.

<a href="http://www.3kidsandlotsofpigs.com/2010/06/cookies-and-more-cookies-from-pig-pen.html" target="_blank">Big Sissy</a> had a track meet today and I know she is exhausted after competing in 3 events: high jump, 400, and the 200. (She had personal bests and set new school records in the high jump and 400.) Yet after getting home from the track meet, she headed to our monthly 4-H meeting and is now out in the barn cleaning the pens of the 4-H pigs. If that isn't love, I don't know what is.<br />

She wants to be right there helping Big Sissy or riding in the tractor with Daddy. As a half-day kindergarten student that spends her afternoons on the farm, I often think she knows more about what is going on than the rest of us as she listens to every one's conversations. <br />

It is something we probably all don't do enough of for various reasons: time, money, and effort may be at the top of the list for many of us. Farmers are possibly more guilty of this than others so it is no surprise that I'm often asked if Farmers get to go on vacation?<br />

Yes, we do, but it possibly takes more planning than other professions to accomplish. In fact <a href="http://www.3kidsandlotsofpigs.com/2010/07/faith-hope-and-love-are-required-at.html" target="_blank">The Farmer </a>and I just got back from taking the kids to <a href="https://disneyworld.disney.go.com/" target="_blank">Walt Disney World </a>for their Spring Break last week. It was an amazing time, but it took a lot of planning and coordination for The Farmer to be gone. Thankfully we farm with his parents so vacations are possible as long as we don't vacation at the same time as his parents as one of us always needs to be around to take care of the pigs. As I've said before the pigs are always our top priority. <br />

In addition to coordinating and planning with The Farmer's parents, it has to be the right time of year to go on a vacation. In general, the spring and fall are out. This is partially why I was not ecstatic when our kids moved to a balanced school calendar and now have a 2 week fall and spring break. In fact when our kids first started school, I didn't think we would ever go away on Spring Break. We've gotten a little leeway on this since our Spring Break was the last week of March and not in April. It was nice to be able to get away as a family after the winter we have had this year, but I know The Farmer thought about the farm every day... it is in his blood. <br />
<br />
So yes, farmers do get to go on Spring Break, but it isn't always a given, can be very weather dependent, and takes lots of coordination and planning. And it may come during the winter or summer. <br />

So here are the top 3 reasons why we raise our pigs in barns.<br />

1. <b> Climate control</b><br />
By raising our pigs in barns, we are able to control their climate and most importantly the temperature of the barn. This is <a href="https://instagram.com/p/xmprVFnWs7/" target="_blank">critical during the winter</a> especially ones like we've had this year and last year in Indiana. On Friday, our kids were on a 2 hour delay due to the temperatures and wind chills. Thankfully our pigs were living it up in their 70 degree barns. This 70 degree temperature is also <a href="http://www.3kidsandlotsofpigs.com/2010/06/farmer-fridays-70-degrees-year-round.html" target="_blank">important during the summer months </a>when we approach 3 digit temperatures in Indiana.<br />

By raising our pigs in barns, we are able to <a href="http://youtu.be/_Kkyf00vdRg" target="_blank">protect them from the elements</a> such as rain, sleet, ice, snow, and hail. Just since Sunday, we've had about 7 inches of snow followed by some rain today. Our pigs didn't have to get wet or cold once thanks to our barns.<br />

3. <b>Protection from predators</b><br />
Pigs are a prey species and are often preyed upon by coyotes which seem to be more and more prevalent in our area. By raising our pigs in barns, we are able to keep them away from the predators.<br />

Every day, every decision we make on our farm is about providing the best care possible to our pigs. Our pigs are our top priority. We truly feel blessed to be able to raise our pigs in barns as <a href="http://www.3kidsandlotsofpigs.com/2013/01/maybe-its-cold-outside.html" target="_blank">our families used to raise pigs outdoors</a> and it wasn't always fun... especially this time of year. My Papa passed away almost 25 years ago. There isn't a day that goes by that I don't think of how excited he would be to see us raising pigs in climate controlled barns. <br />

You see to me it is all about my kids getting to see and work with their parents and grandparents each and every day. Now I don't mean to imply that every day is easy, but with family by your side, it is always better. <br />

This past weekend our family held an open house for our newly built pig barn for our neighbors and local officials. I was so proud to see my kids so excited to talk about our family farm with all that attended. <a href="http://www.3kidsandlotsofpigs.com/2010/06/cookies-and-more-cookies-from-pig-pen.html" target="_blank">Big Sissy</a> even did the official welcome and introductions. I may have had to nudge her to do it, but she wrote her own remarks. <br />
<br />
Over the weekend, <a href="http://www.3kidsandlotsofpigs.com/2010/05/sippy-cup-wars-i-think-we-may-have.html" target="_blank">Little Sissy</a> had a homework assignment where she had to write about who and how she could help someone. The first thing that came to her mind was helping her dad on the farm. As a farmer, it really doesn't get much better than that. <br />
<br />
And with the Super Bowl last night, <a href="http://www.3kidsandlotsofpigs.com/2010/06/cookies-and-more-cookies-from-pig-pen.html" target="_blank">Bubby</a> reminded us that he didn't know if his NFL career would work with farming and that he might have to pass on the NFL. We assured him that if the NFL called, we would be glad to manage the farm for him.<br />
<br />
To me, there is nothing better that having our kids be so involved with the farm. Their love of the farm is genuine and one that will hopefully continue to be passed down for generations to come. <br />
<br />
This is the best part of being a farmer. <br />

Although pork really isn't a white meat, a recent analysis by the United States Department of Agriculture found that pork tenderloin contains the same amount of fat and slightly less calories than the same serving of skinless chicken breast. <br />

Well last week's Farmer Fridays didn't happen quite as planned with the passing of <a href="http://www.3kidsandlotsofpigs.com/2014/11/my-gramma.html" target="_blank">my Gramma</a>, but we survived the events of last week and as I said then, I find much comfort in the fact that she is no longer suffering. </div>

Earlier this week my Gramma was called home after a long battle with Alzheimer's. On Saturday, we will say our final good byes for now, but I find much peace and comfort in knowing that she is no longer suffering and in remembering and sharing the life lessons and loves she taught and gave me.<br />
<br />
My Gramma taught my mom to <a href="http://www.3kidsandlotsofpigs.com/2010/05/sewing-its-family-thing-at-this-pig-pen.html" target="_blank">sew</a> and bake and together they taught me. Although the Alzheimer's prevented my Gramma from teaching the next generation, together my mom and I with the help of an amazing mother-in-law are teaching my kids to do both. <br />
<br />
My Gramma introduced me to soap operas, the CBS soaps to be exact, as we would watch them together on sick and snow days when my parents had to go to work. As she got older she was more protective of what she let my siblings watch, but I have fond memories of watching them with her and using many of the names for my dolls and such. <br />
<br />
My Gramma also used to make me eggnog from scratch. I can't seem to find a recipe just like hers and of course it was in head not written down so I don't make it from scratch myself, but I always buy a half gallon as soon as it is available in the grocery stores each year. My kids don't seem to have the same love for it, but I can't drink a glass of it without thinking of her.<br />
<br />
My Gramma could play the piano by ear. Till this day, I can still hear her playing The Battle Hymn of the Republic like the best of them without a piece of music in front of her. I can only wish that she had passed this talent down to me. <br />
<br />
My Gramma was a competitive and fierce card player. She had her poker club and I can still remember her playing Euchre with everyone at my high school graduation party.<br />
<br />
My Gramma was very devout in her faith and thankfully passed this down to the generation after her. <br />
My Gramma was an amazing lady that loved the Lord and her family more than anything else. She was so talented and I can only hope that I can share a small part of what she taught me and my siblings with my children and future generations.<br />

Normally we would have a small little celebration of sorts, but I think this year everyone is just looking for a good night's sleep as this has been one of the longest harvest seasons I can remember. This got me thinking... farming really is a lot like childbirth and here are my top 7 reasons why.<br />

1. It can be short. <br />

Whether we are talking about <a href="http://www.3kidsandlotsofpigs.com/2010/06/farmer-fridays-our-memorial-day-weekend.html" target="_blank">planting</a> or harvest season, it is all dependent on<a href="http://www.3kidsandlotsofpigs.com/2010/07/farmer-fridays-knee-high-by-fourth-of.html" target="_blank"> Mother Nature</a> so it can be a short season or defer to #2.<br />
<br />
2. It can be long, as in never ending like this year.<br />
<br />
3. It can be a false alarm.<br />
<br />
Just like some women experience early contractions only to be sent home from the hospital, planting and harvest can often have a false alarm thanks to Mother Nature. You know where you get everything ready to go to the fields and then it rains and rains and rains for days. <br />
<br />
4. It can be painful.<br />
<br />
As a farmer there is not much worse than a broken piece of equipment, tractor, or combine during the planting or harvest season.<br />
<br />
5. It might require medication.<br />
<br />
There might be a few nights during a long and painful planting or harvest season that some adult beverages are needed after many hours in the tractor or combine. <br />
<br />
6. It is all about family.<br />
<br />
One of the best parts of being a farmer is getting to share our love and life with our kids each day.<br />

At 6:32pm tonight I got the text from The Farmer that Harvest 2014 was finally done and I couldn't wait to tell all of you.<br />
<br />
You see farming is a lot like childbirth because in the end we don't remember the bad parts of planting or harvest season. We just remember the good, our love for the land, and doing our small part to make sure our family and all of yours have food to eat. Just like my experiences with labor and delivery with these 3 amazing children. <br />

Beer Bread</h2>

Ingredients</h3>

3 c. all-purpose flour</div>
<div>
1/4 c. sugar</div>
<div>
1 T. baking powder</div>
<div>
1 t. salt</div>

12 oz. can beer or non-alcoholic beer</div>

2 T. butter, melted</div>

Directions</h3>

In a bowl, stir together flour, sugar, baking powder, and salt. Add beer; mix well. Pour into a greased 9"x5" loaf pan. Drizzle butter on top. Bake at 375 degrees for about 40-50 minutes, until golden. Slice while still warm. </div>

Enjoy and I may or may not be able to speak from experience when I tell you that this bread is pretty dang good with the melted butter accidentally gets omitted. (I found the melted butter in the microwave as I was cleaning up the kitchen after we ate our Fried Corn Chowder and Beer Bread.)</div>

Over the past 13 years, I've tried to learn the "rules" of <a href="http://www.3kidsandlotsofpigs.com/2010/07/faith-hope-and-love-are-required-at.html" target="_blank">The Farmer </a>and his dad, but even then it isn't foolproof. <br />

However, I will say that these 8 tips usually serve my mother-in-law and I well.<br />

<i><u>8 tips for meal planning on the farm</u></i></h2>
<ol>
<li>Supper will never ever be at the same time every night especially during planting and harvest season so we must be flexible as well as the meals we make and/or buy.</li>
<li>A slow cooker can be your best friend, especially one with a keep warm feature.</li>
<li>Sometimes fast food or carryout from a restaurant are your best option.</li>
<li>Messy is never good whether we are talking about sauces, sandwiches, etc...</li>
<li>Easy to eat is essential. </li>
<li>Planning is good essentially when it comes to meals, but you must also be flexible that plans can always change.</li>
<li>Never try to guess what they are thinking. Sometimes they will want to grab their food and go and sometimes they will stop and eat with you on the tailgate of the truck. </li>
<li>Be flexible, never take it personal, and enjoy every moment as some of our kids' best memories involve taking dinner to their dad or grandpa and sneaking in a ride in the tractor, combine, or semi.</li>

In a slow cooker sprayed with non-stick vegetable spray, layer 1/4 each of potatoes, onions, and butter; add slat, pepper, and some chives. Repeat layering, ending with butter and seasonings. Cover and cook on high setting for one hour. Turn slow cooker to low setting; cook for 5 hours more. Serves 10-12 or one hungry farm family. </div>

Fried Corn Chowder</h2>

Ingredients</h3>

3T. butter, divided</div>
<div>
2 c. fresh or frozen corn</div>
<div>
2 T. dried, minced onion</div>
<div>
2 c. potatoes, peeled and finely diced (this was 4 potatoes)</div>

2c. hot water</div>
<div>
2 T. all-purpose flour</div>
<div>
2 c. milk</div>
<div>
1 t. salt</div>
<div>
1/8 t. pepper</div>

Directions</h3>
<div>
Melt one tablespoon butter in a saucepan over low heat. Add corn; cook, stirring often, until tender.</div>

Meanwhile, melt remaining butter in a separate large saucepan or stockpot. Add onion and cook until lightly golden, stirring often. Add potatoes and hot water. Simmer until potatoes are tender. Drain half of the liquid.</div>

In a bowl, add flour to milk; whisk until no lumps are visible. Add salt and pepper. Stir flour mixture into hot potato mixture; blend well and stir in corn. Simmer until flavors are blended, about 10 minutes. </div>

Rain, Rain, Go Away, Come Again Another Day...<br />

This isn't the <a href="http://www.3kidsandlotsofpigs.com/2010/06/farmer-fridays-rain-rain-go-away.html" target="_blank">first time</a> I have said this. Unfortunately, this summer, we haven't seen a lot of it which hasn't been good for our corn and soybeans trying to grow in the fields. Although it hasn't been quite as dry as last summer, it has definitely been less than desirable which is why rain this time of year is not exactly welcome. Rain this time of year will not help our crops as their growing season is over and harvest season is upon us; however, we can't harvest our crop if the ground is wet. So after the rain this week, we will wait for it to dry up before heading to the fields and hope that<a href="http://www.3kidsandlotsofpigs.com/2010/09/farmer-fridays-its-beginning-to-look.html" target="_blank"> harvest will begin soon.</a><br />

That being said, I am always looking for quick and easy snacks that<a href="http://www.3kidsandlotsofpigs.com/2010/07/faith-hope-and-love-are-required-at.html" target="_blank"> The Farmer</a> can take with him when he is in the fields as harvest usually means long hours. And this recipe is a super double bonus as it is not only quick and easy, but also rather nutritious, and can serve as a snack or breakfast. I had seen a few recipes for these "health balls" floating around on the Internet, but when our great friend Nancy made some for The Farmer and I this summer, we were hooked and they will be the perfect snack for me to keep on hand during the upcoming harvest season. <br />

So last weekend while college friends,<a href="http://www.3kidsandlotsofpigs.com/2010/07/faith-hope-and-love-are-required-at.html" target="_blank"> Tequila, Tutti Fruity, The Captain, and Miller</a>, were heating it up on the beaches of Florida, I was freezing it up in the kitchen with some of my fellow Real Farmwives. (Unfortunately, my work, farm, and mom schedule didn't make traveling to Florida to possible, but that allowed me to join in on the freezer day fun and watch <a href="http://www.3kidsandlotsofpigs.com/2010/06/cookies-and-more-cookies-from-pig-pen.html" target="_blank">Big Sissy</a> and Little Sissy's soccer games while <a href="http://www.3kidsandlotsofpigs.com/2010/07/faith-hope-and-love-are-required-at.html" target="_blank">The Farmer</a> watched <a href="http://www.3kidsandlotsofpigs.com/2010/06/cookies-and-more-cookies-from-pig-pen.html" target="_blank">Bubby's</a> football game at the same time.)<br />

Now I have learned a few things since our last <a href="http://www.3kidsandlotsofpigs.com/2010/11/manicotti-and-more-manicotti.html" target="_blank">freezer cooking day</a> so I had a few requirements when looking for a recipe. I was looking for one with relatively few ingredients and one that was easy to put together. From my experience this is key when making a recipe in bulk and I had 11 batches to make. (Thankfully I had Big Sissy and Little Sissy to help me.)<br />

This is how I stumbled upon Freeze & Bake Lasagna. 8 ingredients which actually became 7 because I couldn't find one of them and it call for uncooked lasagna noodles so it my opinion it more than met my requirements.<br />

We then covered with Press 'n Seal and then aluminum foil as it is ready for the freezer.<br />

When ready to prepare, thaw overnight in the refrigerator. Remove Press 'n Seal, cover with foil, and bake at 350 degrees for 1 1/2 hours. <br />

This summer has been full of events that have made me think of "home." And not just where I live today, but where my heart has been over the years.<br />

The summer started with a major focus on 4-H at this pigpen. <a href="http://www.3kidsandlotsofpigs.com/2010/06/cookies-and-more-cookies-from-pig-pen.html" target="_blank">Big Sissy</a> is a 4th generation 4-Her as this was her second year of 4-H. With our county fair the last week of June, Big Sissy spent the majority of her time the month of June working on her many 4-H projects. As I've said before, 4-H has always played a big part in the lives of <a href="http://www.3kidsandlotsofpigs.com/2010/07/faith-hope-and-love-are-required-at.html" target="_blank">The Farmer</a> and me and it is such a joy to watch Big Sissy love 4-H. Now I'm not quite sure how we will make it when all 3 kids are in 4-H, but we will find a way just like The Farmer and I's moms did.<br />

I even got to visit my "home" county fair this year. This was my youngest cousin's last year of 4-H. He was the last of my generation to finish 4-H in our county. There had been someone in 4-H in my home county since I started 4-H more years ago than I'd like to admit... 1987. That is a lot of years of family picnics, traditions, and fun at the fair. Hopefully next year, my niece will start 4-H and start the tradition of the next generation of 4-Hers in my home county. <br />

Some things have changed but many have stayed the same including many of the faces. It was great to visit my home fair even if I do like my <a href="http://www.3kidsandlotsofpigs.com/2011/11/beef-and-noodles-in-crockpot.html" target="_blank">own recipe for Beef and Noodles </a>better than theirs now, but this is where my love of Beef and Noodles started. <br />

So I don't know who says you can't go home, because I've been going "home" all summer long. <br />

And although this summer has gone by in the blink of an eye and isn't officially over, the start of school is coming sooner rather than later at this pigpen as Big Sissy and<a href="http://www.3kidsandlotsofpigs.com/2010/06/cookies-and-more-cookies-from-pig-pen.html" target="_blank"> Bubby</a> head back to school on July 31st. This just may or may not be the same day Big Sissy's pigs and muffins go to the State Fair for judging later in the week. (No pressure on The Farmer or I.) That being said hopefully we can still squeeze in a few trips "home" either down memory lane or making new memories with what is left of the summer of 2013. <br />

That being said, I always tell people that there is one that always comes to the top of most useful: wine appreciation. Now I know some of you may be wondering what did I really learn in class like that, but I learned a lot. It was a 3 hour Monday night class and we did get to try 3 wines each week, but we also had to learn about the different types of grapes and where they were grown. We learned about wines from France, Italy, California, and Indiana to name a few and tasted them all from sweet to dry. This class really left an impression on me and one that I have found myself leaning back on since graduating from Purdue more years ago then I would like to meet.<br />

As I stated above, we did spend some time learning about the wineries in Indiana and they have only continue to grow in number over the years. In fact today, Indiana has 69 wineries that produce over 1.25 million gallons of wine and attract over 2 million visitors each year. Even cooler than that is my very good friend Miss Jeanette AKA the <a href="https://twitter.com/indianawinebabe" target="_blank">Indiana Wine Babe</a> gets to spend her days promoting those amazing wineries in the state of Indiana. <br />

This is why I'm so excited to invite you all to Vintage Indiana, a festival of wine, food, and fun on June 1st from 11am - 7pm at Military Park in downtown Indianapolis. This is Indiana's largest wine festival featuring locally crafted wines and nearly 30 wineries will be in attendance offering samples of over 300 wines.
